TATAK KAPAMPANGAN

This is an absolute native kapampangan food combination.  Simple and nutritious steamed vegetables, fried fish, fermented rice and shrimp (tagilo). Weird taste to others, but a favorite to many, particularly to the people of Santa Rita Pampanga.

INGREDIENTS:
Fish
Fermented rice and shrimp
Okra
Eggplant
Ampalay
Salt
Water
Garlic
Onion
Ginger
Tomatoes
Cooking oil


DIRECTIONS:

1. Saute the fermented rice and shrimp in ginger, garlic, onion, and tomato.
2. Stir well then add salt and water. Simmer until cooked.
3. Fry the fish.
4. Boil the ampalaya, eggplant, and okra.
5. Arrange on a plate. Serve with rice.

CRAB AND SHRIMP IN PATOLA MISUA SOUP

When the taste of crab meat joins the misua noodles, a creamy flavor is created in the soup. One easy to cook food that will make you sweat while eating.

INGREDIENTS:
Crab
Shrimp
Patola
Ginger
Garlic
Onion
Misua noodles
Green chili
Salt
Cooking oil
Water

DIRECTIONS:
1. Boil the crab and shrimp.
2. Saute the crab and shrimp in ginger, garlic, and onion.
3. Simmer for a minute then add water, salt, green chili, patola, and misua noodles.
4. Mix. Bring to boil, simmer for few minutes then serve.

PINOY ADOBO VERSION # 1

Follow and enjoy Pinoy Adobo in different versions. Now for a start, we used pork as the main ingredient, potato, sweet potato, and the all time agents vinegar, soy sauce, garlic, black pepper and laurel leaves.

INGREDIENTS:
Pork
Potato
Sweet potato
Vinegar
Soy sauce
Garlic
Onion
Black pepper
Laurel leaves
Water
Cooking oil

DIRECTIONS:
1. Put the pork in a casserole with chop garlic, vinegar, black pepper, laurel leaves, and soy sauce. Boil until tender. Add water.
2. Before the meat becomes tender, put the potatoes and sweet potatoes. Simmer for few minutes.
3. When all the ingredients are cooked and tender, saute it in garlic and onion.
4. Simmer for few minutes then serve.

SWEET STYLE SHRIMP TORTA

Using natural ingredient as sweetener is a healthy way to enjoy food without worries. This time, the sweet potato paste becomes the source of sweetness in this shrimp torta dish.

INGREDIENTS:
Shrimp
Sweet potato
Carrots
Bell pepper
Onion
Eggs
Garlic
Salt
Water
Cooking oil
Raisins

DIRECTIONS:
1. Saute garlic, onion, and shrimp.
2. Add salt and water.
3. Put the sweet potato chunks, carrots, raisins, and bell pepper.
4. Stir then simmer for few minutes.
5. In a frying pan, cook the scrumbled eggs with torta on top of it. Then turn it upside down on a platter then serve.

FRIED TILAPIA IN GUAVA SOUP

The sweet taste of ripe guava fruit gives a refreshing flavor in soups. Instead of using pork or shrimp, try this savory fish for a change.

INGREDIENTS:
Tilapia fish
Ripe guava fruits
Gabi
Okra
Eggplant
Kankong
Long green chili
Salt
Fish sauce
Water
Cooking oil

DIRECTIONS:
1. Fry the tilapia then set aside.
2. In a casserole, boil the peeled gabi and ripe guava fruit.
3. Remove the ripe guava fruits when tender then filter to get the juice. Pour it back again to be mixed well with water.
3. Add salt and fish sauce to taste.
4. Put the okra and eggplant, long green chili with the fried tilapia. Bring to boil then put the kangkong.
5. Simmer for a minute then serve.
